Milk 1 litre
50 gms/1 cup Lotus seeds (makhanas)
1/2 cup Sugar
3 to 4 strands saffron (kesar)
1/2 tsp ghee
2-3 Green cardamom (elaichi)
Dry Fruits Pistachu(pista)
Kaju for garnish (optional)
- Heat the ghee in a pan, add the lotus seeds (makhanas) and sauté for 2 to 3 minutes till they are crisp.
- Remove pan from the fire and crush makhanas (lotus fruit) slightly.
- Heat the milk in a non-stick pan or aluminum/steel utensil and when it comes to a boil, reduce heat and keep boiling the milk till it reduces to about ¾ th add the crushed makhanas and simmer for some time till the makhanas are cooked.
- Add the sugar,cardamom and saffron and other your choice ingredients and mix well. Stir to dissolve sugar and then simmer for 10-15 minutes.
Makhaane Ki Kheer is ready; Serve hot garnished with pistachios, Almonds and cashews.
Serve hot or chilled as per your taste buds.
