Lotus seeds pudding – Makhane ki Kheer: Gluten Free Recipe


Milk  1 litre

50 gms/1 cup Lotus seeds (makhanas)

1/2 cup Sugar

3 to 4 strands saffron (kesar)

1/2 tsp ghee

2-3 Green cardamom (elaichi)

Dry Fruits Pistachu(pista)

Almonds (badam)

Kaju for garnish (optional)


  1. Heat the ghee in a pan, add the lotus seeds (makhanas) and sauté for 2 to 3 minutes till they are crisp.
  2. Remove pan from the fire and crush makhanas (lotus fruit) slightly.
  3. Heat the milk in a non-stick pan or aluminum/steel utensil  and when it comes to a boil, reduce heat and keep boiling the milk till it reduces to about ¾ th add the crushed makhanas and simmer for  some time till the makhanas are cooked.
  4. Add the sugar,cardamom and saffron and  other your choice ingredients and mix well. Stir to dissolve sugar and then simmer for 10-15 minutes.

Makhaane Ki Kheer is ready; Serve hot garnished with pistachios, Almonds and cashews.

Serve hot or chilled as per your taste buds.
